I have problems getting my Borgs to do what they are supposed to do
according to the wiki rulebook. They assimilate 1000 enemy colonists
and more per turn, even though they number less than 2000 colonists.

That's roughly right. The wiki is just not formulated very clearly.

Assimilation-rate (drones:assimilations) is:
-1:1 for the first 500 Borg
-A linear function from 1:1 to 1:0.05 from 501 to 10000 drones
-1:0.05 for more than 10000 drones.

So at 2000 the rate is 1:0.75, or 1:0.825 on average for Drones 501 to
2000, yielding 1738 newly assimilated drones.
